2 oz.....light rum
1 oz.....blue Curaçao
4 oz.....pineapple juice
1½ oz.....coconut cream
1 cup.....crushed ice
1.....plastic monkey

In a blender, combine the rum, Curacao, pineapple juice, and coconut cream with the crushed ice. Blend well at high speed. Pour into a Collins glass. Garnish with the monkey.

Banana Colada
2 oz.....dark rum
1 oz.....light rum
1.....very ripe banana, sliced
4 oz.....pineapple juice
1 oz.....coconut cream
1 cup.....crushed ice
1.....maraschino cherry
1.....pineapple slice

In a blender, combine the dark rum, light rum, banana, pineapple juice, and coconut cream with the crushed ice. Blend well at high speed. Pour into a Collins glass. Garnish with the cherry and the pineapple slice.

Place the sugar in a saucer. Rub the rim of a cocktail glass with the lime wedge and dip it into the sugar to coat the rim thoroughly; discard the lime. In a shaker half-filled with ice cubes, combine the vodka, cherry brandy, lime juice, and lemon juice. Shake well. Strain into the cocktail glass and garnish with the cherry.

2 oz.....heavy cream, whipped
1/4 tsp.....grated bittersweet chocolate

Pour the rum, bourbon, Galliano, and hot chocolate into an Irish coffee glass. Spoon the cream carefully so that it floats on top of the drink. Garnish with the grated chocolate.
